Eddie began his food service career in 1973 by applying for work in his home town of Treasure Island, FL. He received his Culinary Degree in Clearwater, Florida right out of high school and continued working his way to an Executive Chef's position at Louisiana Downs in 1991. After ten years at Louisiana Downs, he was invited to run the kitchens at Keeneland in Lexington Kentucky for five years and then returned to Shreveport to take over at the Petroleum Club for fourteen years. He is currently the head chef at East Ridge Country Club since May of 2018.
He has been married to Kathy for 30 years, and they have two sons, an interior designer, Steven in Los Angeles and Joel, a senior in high school. His travels include the Doral Resort in Miami, Carolina Yacht Club in Charleston, and La Chaumiere in Sarasota Florida. Some of his other talents include ice carving and woodworking. He enjoys golf, scuba diving and spending time with his family at Lake Walloon, Michigan.
